Tater Tot Frittata


1/2 Bag Frozen Tater Tots

Olive Oil, as needed

2 Large Sausages (Italian, Breakfast or Veggie Sausage)

Several large handfuls Spinach, Broccoli or other Hearty Greens

1/2 cup Feta Cheese, crumbled

1/2 bunch Green Onions, sliced

6 Eggs

1/2 cup Milk

1 Tbsp Morita, Club Jalapeno or Rheds Original Hot Sauce

Pinch Salt

Sharp Cheddar to top (optional), grated

Preheat oven and spread out tater tots on a sheet pan. Bake according to package directions until they are nice and crispy.

Lower oven temp to 350 degrees. 

Meanwhile, heat olive oil in a medium saute pan or cast iron skillet. Break up sausage into bite sized pieces and cook until nicely browned. Add spinach or other greens and cook just until slightly wilted but not completely soft.  drain on paper towels.  


Place baked tater tots in bottom of skillet and smash down with a fork until they cover the entire bottom of the pan.  Add sausage and spinach to pan and spread over tater tots evenly.   Sprinkle liberally with feta and green onions.


Beat eggs with milk, hot sauce & salt. Pour egg mixture over feta and green onions.  Bake 30 minutes or until egg is set.  Remove from oven, sprinkle grated cheddar on top and place under the broiler a few minutes until cheese is lightly browned.   Cool a few minutes before serving.
